The Perfect Chocolate Cake
I have always been a sucker for box cakes because I am lazy. But I didn’t realize how easy it is to make cake from scratch. After being asked to make a wedding cake for a family friend, I scoured the internet (even my wife’s Pinterest) for the perfect recipe. I knew I had found it as soon as I read that the ingredients included 8oz of hot brewed coffee. If you know me, you know I love coffee. So I did a trial run and….it WAS perfect. I decided to make it a bundt cake because I knew I wanted to top it with a drizzle of ganache. Who can resist the rich chocolatey smooth flavor of ganache? This cake is so moist it really doesn’t need frosting, but the Ganache took it over the top like Stallone and made it look fancy.
Making ganache is easier than you would think. Simply put 8oz of heavy whipping cream in a small pot on the stove. Bring the cream to a simmer, stirring occasionally. Once it starts to simmer, remove from heat and pour in 1 and 1/3 cups semi-sweet chocolate chips (I like to use ghirardelli because they are extra rich). Jiggle the pot a bit to make sure the cream covers all the chips then place a lid on top. (do not stir before placing the lid on). Set your timer for 5 minutes. After five minutes, remove the lid, and with a whisk begin stirring from the center out. Do not stress if it doesn’t appear to be working, keep stirring and suddenly a beautiful rich ganache forms right before your eyes. This recipe makes the perfect amount for one cake and a little left over for me to stir into my morning coffee for a few days. If you want the drizzle affect, use immediately after stirring. After about 20 minutes it will start to thicken up to the consistency of a thin frosting. Put it in the fridge and whip it up for a more traditional looking chocolate frosting or if you want to pipe it onto cupcakes.
