Cornbread Waffles with Chili
Most of us love cornbread and chili regardless of presentation. But there is just something about serving chili on a waffle that elevates it to a whole new level. Kids love it too because they have an innate breakfast palette. “You mean we get to have waffles for dinner?!” We have breakfast for dinner quite often in my house because my wife is a breakfast nut. I believe the term “brinner” was coined by the show Scrubs and gets thrown around here a lot. But not everyone enjoys breakfast for dinner like we do, so this dish allows for the illusion of breakfast while tasting like dinner.
Of course, the key to a delicious cornbread waffle is finding a great recipe, and as it so happens, I have found a spectacular cornbread recipe here at Cooking Classy. Directions for cooking and assembling this dish are at the end of this page.
Directions
Follow the cornbread recipe at link I provided above. That recipe makes a 13×9″ dish of cornbread. You can instead make 3-4 waffles and an 8×8″ pan of cornbread or you can make approximately 7 cornbread waffles. It depends on the size group you are cooking for.
Heat your belgian waffle iron to in between the medium and high setting. When the iron is ready, lightly spray the inside of the iron with a cooking spray to make sure the cornbread doesn’t stick (you will only need to do this for the first waffle). Fill the cornbread mix into the waffle iron just as you would a waffle batter. It will act the same.
When the ready light comes back on remove waffle and immediately top with your favorite chili (we added some black beans to our chili, and we bought our chili pre-made from a local butcher shop) and shredded cheddar cheese. You can add any topping you would like. You are limited only by your imagination and taste preferences.
