After making our pumpkin cream cheese dip for a small get together, we had half of the dip remaining.  So after a brief brain storm, we figured a cookie sammich was the way to go. We had all of the ingredients for cookies on hand we decided to create these oatmeal pumpkin cookie sandwiches.  Why not, right?  They couldn’t turn out bad…I mean both are so delicious on their own, what harm could come from combing in the two?  So we set off on an oatmeal pumpkin cookie sandwich adventure.  The result was a success.  Besides these sandwiches being a bit messy because my wife wanted them to “look pretty in the pictures”, the marriage of the two recipe’s was quite satisfying.

To make these you will follow our Oatmeal cookie recipe, found here.

Then you will make our pumpkin cream cheese dip recipe, found here.  (that recipe makes a large amount for a party, so I suggest cutting the recipe in half for this)

Directions:

Allow the cookies to cool completely so they do not melt the filling.  I would also allow the dip to chill in the fridge (even make it the day before).

Slather as much filling as you want onto the bottom side of one cookie.  Then put another cookie on top!  For the sake of “pretty pictures” my wife made my put a lot of filling in the ones shown,  I recommend only using a quarter to half the amount.  Otherwise it just squishes out everywhere when you take a bite.

Alternative presentation: Cut the cookies into thirds (making strips, not triangles) and dip into the filling.
